How to make Spiral Bread
- Step 1: Cook the milk mixture
80ml non-sugar fresh milk, 20g white sugar, 10g unsalted butter in a small pot, put on the stove to boil over low heat and stir until the sugar dissolves, then turn off the heat.
- Step 2: Mix the dough
Prepare a bowl, whisk 1 egg until foamy, then add 100ml fresh milk, 3g instant yeast and continue stirring well. Then cover and leave for about 30 minutes.
Prepare another bowl, add 200g flour, then pour in the previously prepared milk and egg mixture, mix well.
- Step 3: Knead the dough
Knead the dough by hand using the Fold and Stretch technique until the dough forms a soft, smooth ball.
First, fold the dough, then use the back of your hand to press and push it away. Note that you push it, not down. Next, rotate it 90 degrees and repeat the above two steps for 15 - 20 minutes.
- Step 4: Incubate the dough
After kneading the dough, add a little cooking oil to the bowl and roll the dough evenly in the bowl so that the dough absorbs the cooking oil. Then cover and let the dough rise for about 30 minutes until it has doubled in size.
- Step 5: Shape the cake
Divide the dough into small pieces depending on the size of the mold. Roll the dough into a long roll and then wrap it around the cake pan to shape the cake. Take turns making the next cakes.
Prepare a bowl, add 1 egg yolk, add about 100ml coconut milk, stir well and then use a brush to sweep this mixture around the cake.
- Step 6: Bake the cake
Preheat the oven for about 10 minutes to about 200 degrees C. Place the cake tray in the middle of the oven, put 2 fires, bake at 200 degrees C for about 15 minutes, until the cake turns golden brown.
- Step 7: Finished product
You add the filling to the cake, and the cake is finally complete.
